Here are two seasonal cannabis-infused cookie recipes that are full of fall flavor. Your adult cannabis-loving friends will enjoy them at your next Halloween party or as a trick-or-treat gift. When making them for kids, just remember to substitute regular butter for the cannabutter.

Maple Pumpkin Cookies

Warm cookies right out of the oven on a chilly evening are a great way to celebrate the arrival of fall. These infused cookies explode with the fall flavors of pumpkin and maple.

Ingredients

  • 1⁄2 cup cannabutter
  • 1⁄2 cup brown sugar
  • 1⁄2 cup white sugar
  • 1 egg
  • 3½ tablespoons maple syrup
  • 1⁄2 cup pumpkin puree
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt

Directions

  1. Cream cannabutter and sugars together until light and fluffy
  2. Beat in egg, maple syrup, and pumpkin
  3. Mix together flour, baking soda, cinnamon, nutmeg, and salt.
  4. Stir flour mixture into creamed mixture in thirds.
  5. Drop heaping tablespoons of dough onto ungreased cookie sheet.
  6. Bake at 350 degrees Fahrenheit for 10-12 minutes.

Spooky Sugar Cookies

Sugar cookies are the quintessential holiday cookie. Shopping for Halloween cookie cutters can transform these baked goodies from a typical circular cookie shape to a seasonal theme like pumpkins, ghosts, bats, or witches’ hats.

Ingredients

  • 3 cups all-purpose flour measured, then sifted
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 1½ cups cannabutter, softened
  • 2½ cups granulated sugar (1 ½ cups granulated for recipe, 1 cup for rolling
  • 2 eggs
  • 1¼ tablespoon vanilla extract

Directions

  1. Preheat the oven to 375 degrees Fahrenheit. Line four baking sheets with parchment paper.
  2. Mix the flour, baking powder, and salt in a bowl.
  3. Place the softened cannabutter and sugar in the bowl of an electric mixer. Cream the butter and sugar together on high until light and fluffy (a few minutes) Then, turn the mixer on low and add the eggs and vanilla extract.
  4. With the mixer running on low, slowly add the flour mixture.
  5. Scrape the bowl and beat again for 30 seconds.

Cookie Shapes

Option 1 (Halloween-themed shapes): To get creative with your cookie shapes, roll out the dough to a ½-inch thickness and use Halloween-themed cookie cutters to cut out your dough before baking. Sprinkle your cookies with sugar before baking.

Option 2 (regular cookies): Pour 1 cup sugar into a bowl to coat the cookies. Scoop the dough out and roll into 1-inch balls. The dough should be soft. Put each ball in the sugar bowl to coat, then place on the cookie sheets 2 inches apart. Using the bottom of a drinking glass, press down on each ball until it's ½-inch thick.

Bake each sheet of sugar cookies for 10-11 minutes until the edges are slightly golden and the centers are just barely set.

Cool completely on cookie sheets.
